This vibrant Watermelon Feta Sandwich layers sweet, juicy watermelon with flavorful marinated feta and fresh arugula, finished with a balsamic glaze—refreshing, savory, and perfect for a light summer bite.
Ingredients
4 thick slices seedless watermelon (about 1–1.5 cm thick), cut into sandwich shapes
150 g block feta cheese, cut into thick slices
1 handful fresh arugula
2 Tbsp balsamic glaze
3 Tbsp extra virgin olive oil
1 Tbsp fresh lemon juice
1 tsp lemon zest
1 garlic clove, pressed
1 Tbsp white and black sesame seeds
1 tsp honey
½ tsp dried oregano
½ tsp chili flakes
Freshly cracked black pepper, to taste
Instructions
- Whisk olive oil, lemon juice, lemon zest, garlic, sesame seeds, honey, oregano, chili flakes, and black pepper in a bowl.
- Add feta slices and gently toss to coat. Cover and refrigerate for at least 30 minutes.
- Slice watermelon into thick, sandwich-sized slabs, trimming edges as needed.
- To assemble, layer one watermelon slice, marinated feta slices, arugula, and drizzle with balsamic glaze. Top with second watermelon slice.
- Serve immediately, enjoying with hands or utensils.
