Description

This vibrant Watermelon Feta Sandwich layers sweet, juicy watermelon with flavorful marinated feta and fresh arugula, finished with a balsamic glaze—refreshing, savory, and perfect for a light summer bite.


Ingredients

4 thick slices seedless watermelon (about 1–1.5 cm thick), cut into sandwich shapes

150 g block feta cheese, cut into thick slices

1 handful fresh arugula

2 Tbsp balsamic glaze

3 Tbsp extra virgin olive oil

1 Tbsp fresh lemon juice

1 tsp lemon zest

1 garlic clove, pressed

1 Tbsp white and black sesame seeds

1 tsp honey

½ tsp dried oregano

½ tsp chili flakes

Freshly cracked black pepper, to taste


Instructions

  1. Whisk olive oil, lemon juice, lemon zest, garlic, sesame seeds, honey, oregano, chili flakes, and black pepper in a bowl.
  2. Add feta slices and gently toss to coat. Cover and refrigerate for at least 30 minutes.
  3. Slice watermelon into thick, sandwich-sized slabs, trimming edges as needed.
  4. To assemble, layer one watermelon slice, marinated feta slices, arugula, and drizzle with balsamic glaze. Top with second watermelon slice.
  5. Serve immediately, enjoying with hands or utensils.
