Ingredients

75 grams grated cheddar cheese

8 slices sandwich pickles, patted dry

1 teaspoon spicy mayo (or regular mayo if preferred)

A handful microgreens or lettuce

3 slices turkey breast

3 slices tomato

Optional: 3 slices red onion


Instructions

  1. Preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.
  2. Pat pickle slices dry with paper towels to ensure crispiness.
  3. Create two thin rectangles of grated cheddar cheese on the parchment-lined sheet.
  4. Place 4 pickle slices on each cheese rectangle, packing them tightly. Sprinkle with a little more cheese.
  5. Bake for 18–20 minutes or until the edges are golden. Watch closely to avoid burning.
  6. Cool for 5–10 minutes on the baking sheet so crisps firm up.
  7. Spread spicy mayo on sandwich bread, layer with microgreens, turkey, tomato, and red onion. Top with the cheese-pickle crisps.
