Ingredients
75 grams grated cheddar cheese
8 slices sandwich pickles, patted dry
1 teaspoon spicy mayo (or regular mayo if preferred)
A handful microgreens or lettuce
3 slices turkey breast
3 slices tomato
Optional: 3 slices red onion
Instructions
- Preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.
- Pat pickle slices dry with paper towels to ensure crispiness.
- Create two thin rectangles of grated cheddar cheese on the parchment-lined sheet.
- Place 4 pickle slices on each cheese rectangle, packing them tightly. Sprinkle with a little more cheese.
- Bake for 18–20 minutes or until the edges are golden. Watch closely to avoid burning.
- Cool for 5–10 minutes on the baking sheet so crisps firm up.
- Spread spicy mayo on sandwich bread, layer with microgreens, turkey, tomato, and red onion. Top with the cheese-pickle crisps.
- Assemble and enjoy immediately.
