- 6 6-inch vegan Italian sausages
Vegetables
- 2 cups sliced red bell pepper
- 2 cups sliced green bell pepper
- 2 cups sliced yellow onion

- 2 Tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat the skillet: Place a very large skillet or sauté pan over medium-high heat to prepare for cooking the sausages and vegetables.
- Brown the sausages: Add the vegan sausages whole to the hot pan. Roll them around gently to let them crisp up slightly, cooking for about 5-7 minutes. Once browned on the outside, remove the sausages from the pan and set them aside.
- Sauté the vegetables: Pour the olive oil into the pan. When the oil is hot, add the sliced red and green bell peppers along with the yellow onions. Cook for 12-15 minutes, stirring frequently to evenly soften and caramelize the vegetables while seasoning them with salt and black pepper.
- Combine sausages and vegetables: Slice the browned vegan sausages into bite-sized pieces about 1/2 inch thick. Return the sausage pieces to the pan with the cooked peppers and onions, then sauté everything together for an additional 5-7 minutes until fully heated through and flavors melded.
