Description

Ube Latte with Ube Cold Foam is a vibrant café-style drink made with sweet and nutty ube halaya, creamy milk, smooth espresso, and a fluffy purple cold foam topping. This visually stunning latte balances rich coffee with the unique flavor of ube, making it a perfect homemade specialty drink for coffee lovers.

Ingredients

2 tbsp (30 g) hot water

2 tbsp (30 g) ube halaya (homemade or store-bought)

1/4 tsp (1.25 g) ube extract

2 tbsp (30 g) hot water

1 tsp (1 g) instant espresso powder

12 tbsp (20 g) sweetened condensed milk

Ice

1/2 cup (122 g) milk (dairy or plant-based)

12 tsp (4 g) sweetener, optional

3 tbsp (45 g) heavy cream

1 tbsp (15 g) milk

1/4 tsp (1.25 g) ube extract

12 tsp (4 g) sweetener, optional

Instructions

  1. In a bowl, mix 2 tbsp hot water, ube halaya, and ube extract until smooth.
  2. In another bowl, whisk espresso powder with 2 tbsp hot water until frothy.
  3. Smear condensed milk inside a glass, fill with ice, and add milk.
  4. Pour in the ube mixture, then top with the espresso. Adjust sweetness as desired.
  5. For the cold foam: Whisk or froth heavy cream, milk, and ube extract until fluffy. Add sweetener to taste.
  6. Spoon ube cold foam over the latte and serve immediately.

Notes

  • Best enjoyed fresh, as cold foam deflates over time.
  • Ube halaya is essential for authentic flavor and creaminess—store-bought or homemade both work.
  • Make it vegan with plant-based milk and coconut cream for the foam.
  • For a hot version, use steamed milk and skip the ice.
  • Prepare the ube mixture ahead of time and refrigerate for up to 3 days.
