Description

Crock Pot Tuscan Chicken features tender chicken breasts slow-cooked with garlic, sun-dried tomatoes, artichokes, and spinach, creating a flavorful and effortless Mediterranean-inspired meal.


Ingredients

3 lbs boneless, skinless chicken breast

6 cloves garlic, pressed

1 tsp salt

½ tsp black pepper

14 oz can artichoke hearts, drained and quartered

8 oz jar sun-dried tomatoes packed in oil with herbs

8 oz baby spinach

1 onion, diced


Instructions

  1. Place chicken breasts in the slow cooker and season with salt, pepper, and pressed garlic.
  2. Layer sun-dried tomatoes (with oil and herbs), artichoke hearts, and diced onion over the chicken.
  3. Cover and cook on high for 2½–3 hours or low for 3½–4 hours, until chicken reaches 165°F internal temperature.
  4. Add baby spinach on top, close the lid, and let sit for 5–10 minutes until wilted.
  5. Stir spinach into the mixture. Serve chicken breasts whole with the toppings, or shred and combine everything.
