Ingredients
3 lbs boneless, skinless chicken breast
6 cloves garlic, pressed
1 tsp salt
½ tsp black pepper
14 oz can artichoke hearts, drained and quartered
8 oz jar sun-dried tomatoes packed in oil with herbs
8 oz baby spinach
1 onion, diced
Instructions
- Place chicken breasts in the slow cooker and season with salt, pepper, and pressed garlic.
- Layer sun-dried tomatoes (with oil and herbs), artichoke hearts, and diced onion over the chicken.
- Cover and cook on high for 2½–3 hours or low for 3½–4 hours, until chicken reaches 165°F internal temperature.
- Add baby spinach on top, close the lid, and let sit for 5–10 minutes until wilted.
- Stir spinach into the mixture. Serve chicken breasts whole with the toppings, or shred and combine everything.
