Ingredients
1 Tbsp olive oil
1 sweet onion, diced
1 bell pepper, diced
2 garlic cloves, minced
1 lb ground turkey (94% lean recommended)
2 tsp ground cumin
2 tsp smoked paprika
1 tsp chili powder
½ tsp garlic powder
½ tsp salt
½ tsp freshly cracked black pepper
1 Tbsp all-purpose flour
⅔ cup chicken stock
1 cup shredded cheddar cheese
1 cup shredded lettuce
Pickled onions (for topping)
Cotija cheese (for sprinkling)

Quick Pico
1 pint cherry tomatoes, quartered
½ sweet onion, diced
¼ cup chopped cilantro
Juice of ½ lime
Pinch of salt and pepper
Quick Guacamole
1 avocado
2 Tbsp chopped fresh cilantro
Juice of 1 lime
Pinch of salt and pepper
Instructions
- Heat olive oil in a large skillet over medium-low heat. Add onion, bell pepper, garlic, and pinch of salt. Cook, stirring often, until vegetables soften (~5 minutes).
- Add ground turkey, breaking apart with a spoon. Season with cumin, smoked paprika, chili powder, garlic powder, salt, and pepper. Cook until browned.
- Stir in flour and mix well. Add chicken stock and cook until thickened.
- Sprinkle shredded cheddar cheese over turkey mixture. Let it melt; cover skillet if needed.
- Layer shredded lettuce and pickled onions on top. Finish with quick pico, guacamole, and sprinkle cotija cheese. Serve with lime wedges and tortilla chips.
- For pico: Combine cherry tomatoes, onion, cilantro, lime juice, salt, and pepper in a bowl. Toss gently and set aside.
- For guacamole: Mash avocado, stir in cilantro, lime juice, salt, and pepper. Adjust seasoning and set aside.
