Description

A hearty one-pan dinner featuring seasoned ground turkey, peppers, and onions in a cheesy skillet layered with fresh lettuce, pico, guacamole, and cotija—served with crisp tortilla chips.


Ingredients

1 Tbsp olive oil

1 sweet onion, diced

1 bell pepper, diced

2 garlic cloves, minced

1 lb ground turkey (94% lean recommended)

2 tsp ground cumin

2 tsp smoked paprika

1 tsp chili powder

½ tsp garlic powder

½ tsp salt

½ tsp freshly cracked black pepper

1 Tbsp all-purpose flour

⅔ cup chicken stock

1 cup shredded cheddar cheese

1 cup shredded lettuce

Pickled onions (for topping)

Cotija cheese (for sprinkling)

Lime wedges (for spritzing)

Tortilla chips (for serving)

Quick Pico

1 pint cherry tomatoes, quartered

½ sweet onion, diced

¼ cup chopped cilantro

Juice of ½ lime

Pinch of salt and pepper

Quick Guacamole

1 avocado

2 Tbsp chopped fresh cilantro

Juice of 1 lime

Pinch of salt and pepper


Instructions

  1. Heat olive oil in a large skillet over medium-low heat. Add onion, bell pepper, garlic, and pinch of salt. Cook, stirring often, until vegetables soften (~5 minutes).
  2. Add ground turkey, breaking apart with a spoon. Season with cumin, smoked paprika, chili powder, garlic powder, salt, and pepper. Cook until browned.
  3. Stir in flour and mix well. Add chicken stock and cook until thickened.
  4. Sprinkle shredded cheddar cheese over turkey mixture. Let it melt; cover skillet if needed.
  5. Layer shredded lettuce and pickled onions on top. Finish with quick pico, guacamole, and sprinkle cotija cheese. Serve with lime wedges and tortilla chips.
  6. For pico: Combine cherry tomatoes, onion, cilantro, lime juice, salt, and pepper in a bowl. Toss gently and set aside.
  7. For guacamole: Mash avocado, stir in cilantro, lime juice, salt, and pepper. Adjust seasoning and set aside.
