A spooky and satisfying twist on a classic dish, these Stuffed Jack-O’-Lantern Bell Peppers are filled with a savory ground beef mixture and baked until tender—perfect for Halloween dinners or festive fall gatherings.
Ingredients
6 orange bell peppers
1 pound ground beef
1 egg
4 slices whole wheat bread, cubed
1 small onion, chopped
1 small tomato, diced
2 cloves garlic, minced
½ cup chili sauce
¼ cup yellow mustard
3 tablespoons Worcestershire sauce
¼ teaspoon salt
¼ teaspoon pepper
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 11×17-inch baking dish.
- In a large bowl, combine ground beef, egg, bread cubes, onion, tomato, garlic, chili sauce, mustard, Worcestershire sauce, salt, and pepper. Mix lightly.
- Wash and carve jack-o’-lantern faces into each pepper. Slice off tops and remove seeds and cores.
- Stuff peppers loosely with beef mixture and arrange upright in the baking dish.
- Bake for 1 hour, or until peppers are tender and beef is fully cooked.

- Add cheese inside the filling or on top for extra richness.
