Ingredients
1 lb ground chicken
1 large egg, lightly beaten
2 garlic cloves, minced
2 green onions, thinly sliced (plus extra for garnish)
⅓ cup seasoned bread crumbs
½ tsp smoked paprika
Kosher salt and freshly cracked black pepper, to taste
1 Tbsp olive oil (for cooking)
1 cup BBQ sauce
¼ cup honey
¼ cup water
Cooked rice (type of your choice)
1 (12 oz) bag broccoli slaw mix
¼ cup plain Greek yogurt
¼ cup mayonnaise
2 Tbsp honey
2 Tbsp apple cider vinegar
Kosher salt and freshly cracked black pepper (for slaw)
Instructions
- Combine ground chicken, egg, garlic, green onions, bread crumbs, smoked paprika, salt, and pepper; mix gently.
- Shape into bite-sized meatballs.
- Heat olive oil in skillet over medium heat; brown meatballs on all sides (~5–7 minutes), then transfer to plate.
- Whisk BBQ sauce, honey, and water in skillet; bring to simmer.
- Return meatballs to skillet; cook until sauce thickens and meatballs reach 165°F (74°C).
- Sprinkle with sliced green onions.
- Toss broccoli slaw with Greek yogurt, mayonnaise, honey, apple cider vinegar, salt, and pepper until coated.
- Serve meatballs and sauce over rice with broccoli slaw on the side; garnish with green onions.
