Description

Savory chicken meatballs glazed in a sticky sweet BBQ sauce, served with crisp broccoli slaw and fluffy rice—a quick, flavorful weeknight meal.


Ingredients

1 lb ground chicken

1 large egg, lightly beaten

2 garlic cloves, minced

2 green onions, thinly sliced (plus extra for garnish)

⅓ cup seasoned bread crumbs

½ tsp smoked paprika

Kosher salt and freshly cracked black pepper, to taste

1 Tbsp olive oil (for cooking)

1 cup BBQ sauce

¼ cup honey

¼ cup water

Cooked rice (type of your choice)

1 (12 oz) bag broccoli slaw mix

¼ cup plain Greek yogurt

¼ cup mayonnaise

2 Tbsp honey

2 Tbsp apple cider vinegar

Kosher salt and freshly cracked black pepper (for slaw)


Instructions

  1. Combine ground chicken, egg, garlic, green onions, bread crumbs, smoked paprika, salt, and pepper; mix gently.
  2. Shape into bite-sized meatballs.
  3. Heat olive oil in skillet over medium heat; brown meatballs on all sides (~5–7 minutes), then transfer to plate.
  4. Whisk BBQ sauce, honey, and water in skillet; bring to simmer.
  5. Return meatballs to skillet; cook until sauce thickens and meatballs reach 165°F (74°C).
  6. Sprinkle with sliced green onions.
  7. Toss broccoli slaw with Greek yogurt, mayonnaise, honey, apple cider vinegar, salt, and pepper until coated.
  8. Serve meatballs and sauce over rice with broccoli slaw on the side; garnish with green onions.
