This Spiced Peanut Sweet Potato Salad is a vibrant and flavorful dish combining tender roasted sweet potatoes with warm spices, sweet dates, nutty sesame seeds, and a creamy peanut butter dressing. Ingredients

For the Salad

  • 2 large sweet potatoes, peeled and cut into small cubes
  • 2 tablespoon olive oil
  • 2 teaspoon ground ginger
  • 2 teaspoon ground cinnamon
  • 2 teaspoon ground cumin
  • 1 handful of parsley, chopped
  • 45 gram dates, pitted and chopped
  • 1 tablespoon (heaped) black sesame seeds (white sesame seeds also work—toast as needed)
  • Salt and pepper to taste
  • 1 handful of peanuts, chopped and toasted, for serving (optional)
  • 1 handful chopped radicchio for serving (optional)

For the Dressing

  • 2 tablespoon date syrup or maple syrup
  • 2 tablespoon sesame oil
  • 2 tablespoon smooth peanut butter
  • 1 lemon, juiced


Instructions

  1. Preheat the Oven: Preheat your oven to 240°C (464°F, fan 220°C) to prepare for roasting the sweet potatoes.
  2. Prepare and Roast Sweet Potatoes: Place the peeled and cubed sweet potatoes in a large baking tray, drizzle with olive oil, and sprinkle ground ginger, cinnamon, cumin, salt, and pepper over them. Mix thoroughly to coat all pieces evenly. Roast in the oven for 45-50 minutes until the sweet potatoes are very soft and tender.
  3. Make the Dressing: While the sweet potatoes roast, combine date syrup or maple syrup, sesame oil, smooth peanut butter, and freshly squeezed lemon juice in a bowl. Whisk vigorously with a pinch of salt until the dressing is smooth and emulsified.
  4. Mix the Salad: In a large bowl, combine chopped parsley, chopped dates, and black sesame seeds. Once the roasted sweet potatoes are ready, add them to the bowl along with the prepared dressing. Toss well to blend all ingredients and coat everything evenly.
  5. Serve: Sprinkle toasted chopped peanuts and chopped radicchio over the salad if using. Serve immediately and enjoy this warm, flavorful salad.

Notes

  • You can substitute white sesame seeds for black sesame seeds; just make sure to toast them lightly for better flavor.
  • To toast peanuts or sesame seeds, place them in a dry pan over medium heat and stir frequently until golden and fragrant, about 2-3 minutes.
  • Adjust spices according to taste for more or less warmth and aroma.
  • Radicchio adds a nice bitterness and crunch but is optional if unavailable.
