Ingredients
1 teaspoon sunflower, vegetable, or light olive oil
6–8 bone-in, skin-on chicken thighs
300ml hot chicken stock (made with 1 stock cube)
2 tablespoons mustard (English, wholegrain, or a mix)
2 tablespoons runny honey
1/2 teaspoon dried mixed herbs
4 tablespoons double cream
1 tablespoon cornflour mixed with 1 tablespoon cold water
Salt and freshly ground black pepper
Instructions
- Heat oil in a large frying pan over medium-high heat.
- Season chicken thighs with salt and pepper. Sear skin-side down for 3–5 minutes until golden, then flip and cook 2 minutes.
- In the slow cooker, mix chicken stock, mustard, honey, and mixed herbs.
- Add seared chicken to the slow cooker, skin-side up.
- Cover and cook on high for 3–4 hours or low for 4–6 hours.
- Stir in double cream and cornflour slurry. Cover and cook 10 minutes until sauce thickens.
- Spoon off any excess fat if needed. Serve hot with sauce and sides.
