Description

A creamy and comforting slow cooker soup filled with vegetables, cheese tortellini, and a rich broth. It’s a simple, one-pot dish perfect for chilly nights or a quick family meal.


Ingredients

2 tablespoons olive oil

1 small yellow onion, diced

3 cloves garlic, minced

3 large carrots, peeled and sliced

2 celery stalks, chopped

4 cups low-sodium vegetable broth (or chicken broth)

1 teaspoon dried basil

½ teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1 (9-ounce) package refrigerated cheese tortellini

1 cup heavy cream

1 cup baby spinach or chopped kale (optional)

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions

  1. In a skillet over medium heat, warm olive oil. Sauté diced onion until translucent (3–4 minutes), then add garlic and cook for an additional minute.
  2. Transfer sautéed onions and garlic to the slow cooker. Add carrots, celery, vegetable broth, basil, oregano, red pepper flakes, salt, and pepper. Stir everything together.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until vegetables are tender.
  4. About 30–45 minutes before serving, stir in tortellini and heavy cream. Add spinach or kale if using.
  5. Before serving, stir in grated Parmesan cheese and adjust seasoning as needed.
  6. Ladle soup into bowls and garnish with fresh parsley. Serve hot and enjoy!

Notes

  • For a protein boost, add shredded rotisserie chicken or cooked sausage.
  • For a vegan version, substitute coconut milk or almond milk for heavy cream and skip the cheese.
  • If you don’t have vegetable broth, chicken broth is a great substitute.
  • Store leftovers in the fridge for up to 3 days, or freeze for up to 2 months (with slight texture change after reheating).
