Description

Delightfully spiced and tender pumpkin waffles perfect for a cozy breakfast or brunch. These waffles combine warm autumn flavors with a fluffy texture, made easy with simple pantry ingredients and a waffle iron.

Ingredients

Dry Ingredients

  • 2 cups all purpose flour
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1-2 teaspoons pumpkin spice (a blend of ground cinnamon, ginger, allspice, and nutmeg)
  • 1 teaspoon cinnamon

Wet Ingredients

  • 3 large eggs
  • 1 1/3 cups milk
  • 1/4 cup maple syrup
  • 3 tablespoons oil (or melted butter)
  • 1 cup canned pumpkin (not a full 15 oz can)

Instructions

  1. Mix Dry Ingredients: In a large bowl, stir together all the dry ingredients—flour, brown sugar, baking powder, baking soda, salt, pumpkin spice, and cinnamon—until well combined.
  2. Combine Wet Ingredients: In a separate measuring jug or bowl, whisk the eggs, milk, maple syrup, melted butter or oil, and canned pumpkin until the mixture is smooth and uniform.
  3. Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients and gently stir until just combined. It’s okay if the batter has some lumps; overmixing can make waffles tough.
  4. Cook Waffles: Preheat your waffle iron and lightly grease it if needed. Pour batter onto the waffle iron and bake according to the manufacturer’s instructions. For best results, cook on medium heat for a slightly longer time than usual to ensure the waffles are cooked through inside and crisp on the outside.

Notes

  • For the pumpkin spice, if you don’t have a pre-made blend, combine ground cinnamon, ginger, allspice, and nutmeg to taste.
  • You can substitute milk with a dairy-free alternative for a lactose-free option.
  • Use oil or melted butter according to your preference for flavor or dietary needs.
  • Don’t overmix the batter; lumps help keep the waffles tender.
  • Adjust cooking time on your waffle maker depending on how crispy you like your waffles.
  • These waffles are best served warm with syrup, butter, or your favorite toppings.
