Description

This classic Shrimp Scampi recipe combines tender shrimp sautéed in a rich garlic butter and olive oil sauce, accented with fresh parsley and bright lemon juice. Perfect for a quick, flavorful dinner that pairs well with pasta or crusty bread.

Ingredients

Shrimp and Sauce

  • 4 tablespoons salted butter
  • 2 tablespoons extra-virgin olive oil
  • 6 garlic cloves, minced (about 2 tablespoons)
  • ½ teaspoon sea salt
  • ½ teaspoon red pepper flakes
  • Freshly cracked black pepper, to taste
  • 1 ½ pounds large raw shrimp, peeled and deveined

Garnish

  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh lemon juice (from 1 to 2 lemons)

Instructions

  1. Heat the fats: In a large skillet over medium heat, melt 4 tablespoons of salted butter with 2 tablespoons of extra-virgin olive oil until fully combined and hot.
  2. Sauté the garlic: Add the minced garlic to the skillet and cook while stirring for about 1 minute or until fragrant, making sure not to burn the garlic.
  3. Add seasonings: Stir in ½ teaspoon sea salt, ½ teaspoon red pepper flakes, and freshly cracked black pepper to taste to the garlic butter mixture.
  4. Cook the shrimp: Add 1 ½ pounds of large raw peeled and deveined shrimp to the skillet. Cook, stirring occasionally, for 3 to 4 minutes until the shrimp turn pink, opaque, and are cooked through.
  5. Finish with herbs and lemon: Remove from heat and stir in ¼ cup chopped fresh parsley and 2 tablespoons fresh lemon juice to brighten the dish.
  6. Serve immediately: Serve the shrimp scampi hot, ideally over pasta, rice, or with crusty bread to soak up the buttery sauce.

Notes

  • For a spicier dish, increase the red pepper flakes to taste.
  • Use fresh lemon juice for the brightest flavor; bottled juice will work if fresh is unavailable.
  • This dish is best served immediately to retain the freshness of the shrimp and vibrant flavors.
  • Can be paired with linguine or angel hair pasta for a classic shrimp scampi meal.
  • To keep shrimp tender, avoid overcooking; remove from heat as soon as they turn pink.
