Ingredients

Base Ingredients

  • 15 oz pumpkin puree (note 1)
  • 3 tablespoons tahini
  • 2 tablespoons olive oil
  • 1/2 lemon, juiced
  • 2 cloves garlic, minced
  • 3/4 teaspoon salt
  • 1 1/2 teaspoon cumin
  • 1 1/2 teaspoon ground coriander

Chickpeas

  • 15 oz can of chickpeas (reserve liquid)
  • Approximately 1/3 cup liquid from can of chickpeas


Instructions

  1. Combine: In the base of a 7-cup food processor fitted with a steel blade, combine the pumpkin puree, tahini, olive oil, lemon juice, minced garlic, salt, cumin, coriander, and 1/4 cup of the reserved chickpea liquid. Process for one minute until the mixture is smooth and integrated.
  2. Add chickpeas: Add the chickpeas to the food processor. Blend for 1 minute on a low setting, gradually adding 1 to 2 tablespoons of the remaining chickpea liquid through the shoot to help achieve a creamy texture.
  3. Blend until creamy: Scrape down the sides of the food processor bowl to incorporate any stuck ingredients, then blend on high for 1 to 2 minutes, adding additional chickpea liquid as needed to reach the desired smooth and creamy consistency.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling, for the best flavor.
  • Adjust the amount of chickpea liquid to achieve your preferred hummus consistency.
