Description

Tender, lightly caramelized zucchini rounds roasted to golden perfection with garlic and onion powder, fragrant Italian herbs, and finished with fresh parsley — a simple and healthy side dish.


Ingredients

4 medium zucchini, sliced into ¼‑inch rounds

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt, to taste

Pepper, to taste

1 teaspoon dried Italian herbs (optional)

Fresh parsley, chopped for garnish


Instructions

  1. Preheat oven to 425 °F (220 °C).
  2. Wash and slice zucchini into ¼‑inch rounds.
  3. In a large bowl, toss zucchini with olive oil, garlic powder, onion powder, Italian herbs (if using), salt, and pepper until evenly coated.
  4. Spread the seasoned zucchini in a single layer on a parchment-lined baking sheet.
  5. Roast for 15–20 minutes, stirring halfway, until tender and lightly browned.
  6. Remove from oven, transfer to a serving dish, and garnish with chopped fresh parsley. Serve immediately.
