Ingredients

Baguette and Butter Mixture

  • 2 Tablespoons butter (melted)
  • 2 Tablespoons olive oil
  • 1/2 French baguette (sliced thin)

Roasted Cranberries

  • 12 ounces fresh cranberries
  • 2 Tablespoons balsamic vinegar
  • 1/2 cup sugar
  • 1 Tablespoon fresh rosemary

Topping

  • 4 ounces triple cream brie
  • Optional: fresh thyme, for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for roasting both the cranberries and baguette slices simultaneously.
  2. Prepare Baguette Slices: In a small bowl, whisk together the melted butter and olive oil. Brush this mixture on both sides of the thinly sliced baguette pieces, then arrange them on a baking sheet lined with parchment paper or foil. Set aside.
  3. Mix Cranberries: In another bowl, combine the fresh cranberries, balsamic vinegar, sugar, and chopped fresh rosemary. Stir well until evenly mixed. Spread the cranberry mixture on a rimmed baking sheet lined with parchment paper to prevent sticking and facilitate easy cleanup.
  4. Roast Cranberries: Place the baking sheet with cranberries in the oven and roast for 5 minutes, allowing them to start popping open and releasing juices.
  5. Add Baguette to Oven: After the first 5 minutes, add the baguette slices baking sheet to the oven alongside the cranberries. Continue roasting both for 6 additional minutes until baguette starts to crisp.
  6. Flip Baguette Slices: Remove the baguette slices from the oven and flip each piece over to toast the other side. Return them to the oven and roast for another 4-6 minutes, or until they are crispy, golden, and fully toasted. At this point, the cranberries should be soft and bursting with juice.
  7. Remove and Assemble: Take both trays out of the oven. Place a slice of creamy triple cream brie on each toasted baguette slice, then spoon a generous amount of the warm roasted cranberry mixture on top.
  8. Garnish and Serve: Optionally garnish each crostini with fresh thyme. Serve immediately while the cranberries are still warm, or prepare ahead by chilling the cranberries overnight and storing crostini in a zip-lock bag, assembling just before serving at room temperature.
