Ingredients
½ cup pumpkin puree (unsweetened, not pie filling)
¼ cup maple syrup
1 large egg
½ cup milk (dairy or non-dairy)
1 tsp vanilla extract
2 tbsp melted butter
1¼ cup all-purpose flour (or blend rolled oats into flour for oat flour)
1 tsp baking powder
½ tsp cinnamon
1 tsp pumpkin pie spice

Instructions
- Preheat your mini waffle maker.
- In a medium bowl, whisk together pumpkin puree, maple syrup, egg, milk, vanilla extract, and melted butter.
