Ingredients

25 ml olive oil

140 g yellow onion (chopped)

350 g ground beef

10 g fresh parsley (chopped)

4 g salt

3 g cumin powder

3 g garlic powder

3 g cayenne powder

2 g black pepper

1 g Italian seasoning

30 g tomato paste

75 ml water

250 g ricotta

10 g fresh chives (chopped)

1 g black pepper

540 g fresh puff pastry

Grated cheese (for sprinkling)

1 egg (for egg wash)

Sesame seeds (for garnish)


Instructions

  1. Prepare the Beef Mixture: Heat olive oil in a frying pan over medium heat. Add chopped onion and sauté for 3-4 minutes until softened. Add the ground beef, fresh parsley, salt, cumin powder, garlic powder, cayenne powder, black pepper, and Italian seasoning. Cook for 6-7 minutes, breaking up the meat. Stir in tomato paste and water, simmer for 2-3 minutes. Remove from heat and let cool completely.
  2. Prepare the Ricotta Mixture: In a bowl, mix ricotta, fresh chives, and black pepper. Set aside.
  3. Assemble the Pastry Bites: Roll out the puff pastry on a floured surface and cut each sheet in half. Spread a line of ricotta mixture on the pastry. Spoon ground beef mixture on top, sprinkle with grated cheese. Roll tightly and slice into pieces.
  4. Prepare for Baking: Place the puff pastry bites on a parchment-lined baking tray. Brush with egg wash and sprinkle with sesame seeds.
  5. Bake the Puff Pastries: Preheat oven to 190°C (375°F). Bake for 25-30 minutes, or until golden brown and cooked through.
