Description

This Cheesy Potato Casserole is a creamy, hearty dish made with hash browns, sour cream, cheese, and caramelized onions. It’s easy to prepare and perfect for family meals, holidays, or potlucks.


Ingredients

3 Tbsp butter

1 cup yellow onion, diced

20 oz frozen shredded potatoes (hash browns)

1 (10 oz) can cream of mushroom soup

1 cup sour cream

2 cups shredded cheese, divided

2 tsp garlic salt

1 cup chicken broth


Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a skillet, melt butter over medium heat. Add diced onions and sauté until lightly caramelized, about 5 minutes.
  3. In a large bowl, mix hash browns, soup, sour cream, 1½ cups cheese, sautéed onions, garlic salt, and broth until combined.
  4. Spread mixture into prepared baking dish and top with remaining ½ cup cheese.
  5. Bake uncovered for 30–40 minutes until bubbly and golden.
  6. Let rest briefly before serving warm.
