Description

This Gourmet Peanut Butter Popcorn is a sweet, salty, and crunchy treat made with a peanut butter-marshmallow caramel coating. It’s quick to make and perfect for movie nights, parties, or gifting.


Ingredients

12 cups air-popped popcorn (kernels removed)

½ cup butter (1 stick)

1 cup granulated sugar

½ cup Karo syrup (light corn syrup)

⅓ cup water

5 oz mini marshmallows (about 3 cups)

1 cup creamy peanut butter


Instructions

  1. Place popcorn in a large bowl, removing any unpopped kernels.
  2. In a large saucepan, melt butter over medium heat. Add sugar, corn syrup, and water. Bring to a boil and cook until the mixture reaches 235–240°F (soft-ball stage).
  3. Remove from heat, stir in marshmallows until melted, then mix in peanut butter until smooth.
  4. Pour the mixture over the popcorn. Stir gently to coat evenly.
  5. Spread coated popcorn on a parchment-lined baking sheet. Let cool completely, then break into clusters.
  6. Serve or store in an airtight container at room temperature for up to 5 days.

  • Use plain, unsalted popcorn for best results.
  • Add chopped peanuts or pretzels for crunch.
  • Drizzle with melted chocolate after cooling for a richer version.
  • Natural peanut butter may need adjusting for consistency.
