This Gourmet Peanut Butter Popcorn is a sweet, salty, and crunchy treat made with a peanut butter-marshmallow caramel coating. It’s quick to make and perfect for movie nights, parties, or gifting.
Ingredients
12 cups air-popped popcorn (kernels removed)
½ cup butter (1 stick)
1 cup granulated sugar
½ cup Karo syrup (light corn syrup)
⅓ cup water
5 oz mini marshmallows (about 3 cups)
1 cup creamy peanut butter
Instructions
- Place popcorn in a large bowl, removing any unpopped kernels.
- In a large saucepan, melt butter over medium heat. Add sugar, corn syrup, and water. Bring to a boil and cook until the mixture reaches 235–240°F (soft-ball stage).
- Remove from heat, stir in marshmallows until melted, then mix in peanut butter until smooth.
- Pour the mixture over the popcorn. Stir gently to coat evenly.
- Spread coated popcorn on a parchment-lined baking sheet. Let cool completely, then break into clusters.
- Serve or store in an airtight container at room temperature for up to 5 days.
Notes
- Use plain, unsalted popcorn for best results.
- Add chopped peanuts or pretzels for crunch.
- Drizzle with melted chocolate after cooling for a richer version.
- Natural peanut butter may need adjusting for consistency.
