Description

This Peach Tomato Feta Salad is a refreshing summer dish combining ripe peaches, sweet cherry tomatoes, and creamy feta cheese, all tossed in a tangy maple-lemon dressing. It’s a light and healthy salad that’s perfect for BBQs, picnics, or as a light lunch.


Ingredients

3 ripe peaches

1 pint multicolor cherry tomatoes

1 green onion

Handful fresh basil leaves (approx. 15 leaves)

2/3 cup feta cheese

2 tbsp olive oil

2 tbsp red wine vinegar

2 tsp maple syrup

1 tbsp fresh lemon juice

1/2 tsp garlic powder

Salt + black pepper


Instructions

  1. Begin by slicing the peaches into thin, even slices. Make sure the peaches are ripe, but still firm enough to hold their shape.
  2. Slice the cherry tomatoes in half, thinly slice the green onion, and chop the basil leaves into smaller pieces. Fresh basil is key to giving the salad its aromatic, herbal flavor.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, maple syrup, fresh lemon juice, garlic powder, salt, and black pepper. Taste the dressing and adjust the seasoning if needed.
  4. In a large mixing bowl, combine the sliced peaches, halved cherry tomatoes, crumbled feta cheese, sliced green onions, and chopped basil.
  5. Pour the prepared vinaigrette over the salad ingredients and gently toss everything together to ensure it’s well-coated.
  6. You can serve the salad immediately or refrigerate it for 15-20 minutes to allow the flavors to meld together.
  7. For an extra touch, sprinkle additional feta and fresh basil on top just before serving.
