Description
One Pot Garlic Butter Shrimp and Orzo is a quick, flavorful dish featuring juicy shrimp, toasty orzo pasta, and a rich garlic-butter sauce brightened with lemon and parsley—all made in one pan for easy cleanup.
Ingredients
1 lb raw shrimp, peeled and deveined
3 tbsp olive oil
1 lemon, juiced and zested
4 garlic cloves, minced
1/2 tsp crushed red pepper flakes
Kosher salt, to taste
Black pepper, to taste
1 cup orzo
2 tbsp unsalted butter
2 garlic cloves, minced (for orzo)
2 1/4 cups chicken stock
3 tbsp chopped fresh parsley
Lemon wedges, for serving
Instructions
- In a large bowl, combine shrimp, olive oil, lemon juice, lemon zest, garlic, red pepper flakes, salt, and pepper. Let marinate for 10 minutes.
- In a large skillet, melt butter over medium heat. Add orzo and toast, stirring often, until lightly golden. Stir in garlic and cook for 30 seconds.
- Pour in chicken stock, bring to a boil, then reduce to a simmer. Cover and cook 12–15 minutes, until orzo is tender and liquid is absorbed.
- Stir shrimp into the orzo, cover, and cook 5–8 minutes, until shrimp are pink and cooked through.
- Top with parsley and a squeeze of lemon. Optional: stir in extra melted butter for added richness. Serve immediately.
Notes
- Increase red pepper flakes for extra spice.
- Swap parsley for fresh dill or basil for a flavor twist.
- Add vegetables like spinach, asparagus, or peas in the last few minutes of cooking.
- Use lime juice instead of lemon for a tropical note.
- Replace some broth with white wine for added depth.
