Description

One Pot Garlic Butter Shrimp and Orzo is a quick, flavorful dish featuring juicy shrimp, toasty orzo pasta, and a rich garlic-butter sauce brightened with lemon and parsley—all made in one pan for easy cleanup.


Ingredients

1 lb raw shrimp, peeled and deveined

3 tbsp olive oil

1 lemon, juiced and zested

4 garlic cloves, minced

1/2 tsp crushed red pepper flakes

Kosher salt, to taste

Black pepper, to taste

1 cup orzo

2 tbsp unsalted butter

2 garlic cloves, minced (for orzo)

2 1/4 cups chicken stock

3 tbsp chopped fresh parsley

Lemon wedges, for serving


Instructions

  1. In a large bowl, combine shrimp, olive oil, lemon juice, lemon zest, garlic, red pepper flakes, salt, and pepper. Let marinate for 10 minutes.
  2. In a large skillet, melt butter over medium heat. Add orzo and toast, stirring often, until lightly golden. Stir in garlic and cook for 30 seconds.
  3. Pour in chicken stock, bring to a boil, then reduce to a simmer. Cover and cook 12–15 minutes, until orzo is tender and liquid is absorbed.
  4. Stir shrimp into the orzo, cover, and cook 5–8 minutes, until shrimp are pink and cooked through.
  5. Top with parsley and a squeeze of lemon. Optional: stir in extra melted butter for added richness. Serve immediately.
