Description

A delicious and easy no-bake dessert that mimics the classic eclair. With layers of graham crackers, creamy vanilla pudding, and a rich chocolate topping, it’s a perfect make-ahead treat.


Ingredients

2 packages of graham crackers

2 boxes of instant vanilla pudding

3 ½ cups cold milk

1 container of whipped topping (about 8 oz)

1 cup chocolate chips

2 tablespoons butter

1 teaspoon vanilla extract

¼ cup powdered sugar


Instructions

  1. In a large bowl, combine the instant vanilla pudding mix and cold milk. Whisk until smooth and thickened.
  2. Fold in the whipped topping until fully combined. Set aside.
  3. In a saucepan, melt chocolate chips and butter over low heat. Stir in vanilla extract and powdered sugar until smooth. Remove from heat.
  4. In a 9×13-inch baking dish, layer graham crackers at the bottom. Spread half of the pudding mixture over the crackers. Add another layer of graham crackers, then top with the remaining pudding mixture. Finish with a final layer of graham crackers.
  5. Pour the chocolate mixture evenly over the top layer of graham crackers and spread to cover completely.
  6. Refrigerate for at least 4 hours, or overnight to allow it to set.
  7. Serve chilled and enjoy!

Notes

  • Substitute homemade whipped cream for store-bought whipped topping for a different texture.
  • Skip the chocolate topping for a simpler version of the dessert.
