Description

Nacho Chicken is a comforting, cheesy casserole that combines tender cubed chicken, creamy Velveeta, and hearty tortilla chips, making it the perfect dish for a family dinner or appetizer.


Ingredients

4 cups cubed cooked chicken

1 pound Velveeta, cubed

2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted

1 can (10 ounces) diced tomatoes and green chiles, undrained

1 cup chopped onion

1/2 teaspoon garlic salt

1/4 teaspoon pepper

1 package (14-1/2 ounces) nacho cheese tortilla chips

Optional: Sliced jalapeno pepper and diced tomato for topping


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Prepare the mixture: In a large bowl, combine the cooked chicken, Velveeta, cream of chicken soup, diced tomatoes with green chiles, chopped onion, garlic salt, and pepper. Mix well to combine.
  3. Prepare the chips: Crush the nacho cheese tortilla chips into small pieces. Set aside 1 cup of the crushed chips for topping. Add the remaining crushed chips to the chicken mixture and stir to incorporate.
  4. Assemble the casserole: Spoon the chicken mixture into a greased 13×9-inch baking dish. Sprinkle the reserved crushed chips on top for extra crunch.
  5. Bake: Place the baking dish in the preheated oven and bake, uncovered, for 30 minutes or until the cheese is melted and the edges are bubbly.
