Description

Ingredients

2 tbsp extra virgin olive oil, divided

1 large yellow onion, thinly sliced

½ tsp kosher salt

16 oz baby bella mushrooms, sliced

½ tsp minced garlic

2 tsp finely chopped fresh thyme (or ½ tsp dried thyme)

¼ tsp ground black pepper

½ cup shredded Gruyere or Swiss cheese (about 1 ½ oz)

2 sheets frozen puff pastry (10-inch square, thawed)

1 egg, beaten

3 tbsp whole-grain mustard

Chopped fresh parsley, for garnish


Instructions

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a skillet, heat 1 tbsp olive oil over medium-low. Add onion and salt, cooking until golden and caramelized, about 25 minutes. Transfer to a bowl.
  3. Add remaining oil and mushrooms to the skillet. Cook until tender, about 5 minutes. Stir in garlic, thyme, and pepper, cooking 1 more minute. Mix with onions and stir in shredded cheese.
  4. On a lightly floured surface, roll puff pastry into 10.5-inch squares. Cut into 2-inch rounds (or squares to reduce waste).
  5. Arrange pastry rounds on baking sheets. Brush with egg wash and prick each with a fork.
  6. Top with ¼ tsp mustard and 1 tbsp mushroom mixture.
  7. Bake for 25 minutes, rotating pans halfway, until puffed and golden. Let cool 5 minutes, garnish with parsley, and serve warm or at room temperature.

Notes

  • Caramelize onions low and slow for the richest flavor.
  • Gruyere cheese adds depth, but cheddar, Parmesan, or Fontina also work well.
