Description

Matcha Crème Brûlée is a luxurious French dessert infused with earthy Japanese matcha green tea. Ingredients

2½ cups heavy cream, divided

4 teaspoons culinary grade matcha

4 large egg yolks

5 tablespoons granulated sugar, plus more for caramelizing


Instructions

  1. Preheat oven to 300°F and prepare hot water for a water bath.
  2. In a saucepan, heat 2 cups heavy cream. In a separate bowl, whisk matcha into ½ cup heavy cream until smooth, then add to the saucepan. Stir often and scald (do not boil). Remove from heat.
  3. In a bowl, whisk egg yolks and sugar until combined. Slowly stream in the hot cream while whisking to temper the yolks.
  4. Strain the mixture through a fine mesh sieve into a container with a spout for a silky texture.
  5. Place four 8-ounce ramekins in a deep baking pan. Pour custard mixture evenly into ramekins. Add hot water to the pan until it reaches halfway up the sides of the ramekins.
  6. Bake for about 30 minutes, until the centers are just set but slightly wobbly.
  7. Remove ramekins from the water bath, let cool to room temperature, then refrigerate for at least 2 hours or overnight.
  8. Before serving, sprinkle about 1 tablespoon sugar evenly on top of each custard. Torch until caramelized and golden. Allow to cool briefly before serving.
