Ingredients
2½ cups heavy cream, divided
4 teaspoons culinary grade matcha
4 large egg yolks
5 tablespoons granulated sugar, plus more for caramelizing
Instructions
- Preheat oven to 300°F and prepare hot water for a water bath.
- In a saucepan, heat 2 cups heavy cream. In a separate bowl, whisk matcha into ½ cup heavy cream until smooth, then add to the saucepan. Stir often and scald (do not boil). Remove from heat.
- In a bowl, whisk egg yolks and sugar until combined. Slowly stream in the hot cream while whisking to temper the yolks.
- Strain the mixture through a fine mesh sieve into a container with a spout for a silky texture.
- Place four 8-ounce ramekins in a deep baking pan. Pour custard mixture evenly into ramekins. Add hot water to the pan until it reaches halfway up the sides of the ramekins.
- Bake for about 30 minutes, until the centers are just set but slightly wobbly.
- Remove ramekins from the water bath, let cool to room temperature, then refrigerate for at least 2 hours or overnight.
- Before serving, sprinkle about 1 tablespoon sugar evenly on top of each custard. Torch until caramelized and golden. Allow to cool briefly before serving.
