Description

This Maple-Dijon Sheet Pan Sausage and Veggies is a quick and wholesome one-pan dinner featuring smoky sausage, caramelized sweet potatoes, apples, Brussels sprouts, and onions roasted in a sweet and tangy maple-Dijon glaze. Ingredients

Nonstick cooking spray

12 oz smoked sausage, sliced

2 medium sweet potatoes, peeled and diced

2 crisp apples, cored and diced

1 lb Brussels sprouts, halved

1 medium red onion, cut into chunks

2 garlic cloves, minced

1/4 cup olive oil

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

Kosher salt and freshly cracked black pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C). Lightly coat a large rimmed sheet pan with nonstick cooking spray.
  2. Arrange sausage, sweet potatoes, apples, Brussels sprouts, onion, and garlic on the pan. Use two pans if crowded.
  3. Whisk olive oil, maple syrup, and Dijon mustard in a small bowl. Drizzle over ingredients and toss to coat evenly. Season with salt and pepper.
  4. Roast for 30–40 minutes, stirring halfway through, until veggies are tender and caramelized.
  5. Serve warm and enjoy.
