Ingredients
Nonstick cooking spray
12 oz smoked sausage, sliced
2 medium sweet potatoes, peeled and diced
2 crisp apples, cored and diced
1 lb Brussels sprouts, halved
1 medium red onion, cut into chunks
2 garlic cloves, minced
1/4 cup olive oil
1/4 cup pure maple syrup
2 tablespoons Dijon mustard
Kosher salt and freshly cracked black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Lightly coat a large rimmed sheet pan with nonstick cooking spray.
- Arrange sausage, sweet potatoes, apples, Brussels sprouts, onion, and garlic on the pan. Use two pans if crowded.
- Whisk olive oil, maple syrup, and Dijon mustard in a small bowl. Drizzle over ingredients and toss to coat evenly. Season with salt and pepper.
- Roast for 30–40 minutes, stirring halfway through, until veggies are tender and caramelized.
- Serve warm and enjoy.
