Description

Magic Lemon Cobbler is a sweet and zesty dessert with a soft, cakey top and a luscious lemony filling that forms magically while baking. This easy-to-make cobbler combines the bright flavors of lemon with a rich, buttery texture, creating a delightful treat perfect for any occasion. With just a few simple ingredients, it’s sure to become a family favorite!

Ingredients

For the Cobbler:

½ cup (1 stick) unsalted butter

1 cup all-purpose flour

2 teaspoons baking powder

¼ teaspoon salt

¾ cup granulated sugar

1 cup buttermilk (or whole milk)

2 teaspoons vanilla extract

1 lemon (zested and juiced; about 1 tablespoon zest and just under ¼ cup juice)

For the Lemon Filling:

1 (18 oz) can lemon pie filling or lemon curd

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Place the butter in a 9×9-inch baking dish and place it in the oven to melt for 3-4 minutes. Remove from the oven once the butter is melted.
  2. Prepare the batter: In a bowl, whisk together the flour, baking powder, salt, and sugar. Add the buttermilk, vanilla extract, lemon zest, and lemon juice. Mix until smooth and well combined.
  3. Assemble the cobbler: Pour the batter over the melted butter in the baking dish. Do not stir.
  4. Add the lemon filling: Spoon the lemon pie filling or curd evenly over the top of the batter.
  5. Bake: Place the dish in the preheated oven and bake for 45-55 minutes, or until the cobbler is golden and puffed.
  6. Let cool: Let the cobbler sit for 10-15 minutes before serving to allow the filling to set.

Notes

  • Blueberry Lemon Cobbler: Add fresh or frozen blueberries to the lemon pie filling for a fruity twist.
  • Berries Cobbler: You can also add raspberries or blackberries to the pie filling for a mixed berry lemon cobbler.
  • Make it Lighter: Substitute the butter with coconut oil and use almond milk for a lighter, dairy-free version of the cobbler.
