Description

Juicy shrimp marinated in a zesty blend of lime, chili, and cumin, quickly sautéed and tossed in a garlicky cilantro-lime butter—perfect for tacos, salads, or as a stand-alone main.


Ingredients

2 lbs jumbo shrimp (1621 ct), peeled (tails on) and deveined

2 tbsp unsalted butter, divided

2 tbsp olive oil, divided

Marinade:

1 tbsp olive oil

1 tbsp lime juice

1 tsp chili powder

1 tsp ground cumin

1 tsp onion powder

½ tsp smoked paprika

½ tsp ground coriander

½ tsp salt

½ tsp black pepper

¼ tsp cayenne pepper

Cilantro-Lime Butter:

3 tbsp unsalted butter

6 garlic cloves, minced

1 cup fresh cilantro, chopped

34 tbsp lime juice


Instructions

  1. In a bowl, whisk all marinade ingredients. Add shrimp, toss to coat, and marinate 15–30 minutes at room temperature (up to 60 minutes refrigerated).
  2. Heat 1 tbsp butter and 1 tbsp olive oil in a large skillet over medium-high heat. Sauté half the shrimp 2–3 minutes per side until opaque. Transfer to a plate; repeat with remaining butter, oil, and shrimp.
  3. In the same skillet, melt 3 tbsp butter over medium heat. Add garlic; cook 1 minute until fragrant. Remove from heat and stir in cilantro and lime juice.
  4. Return all shrimp to the pan; toss to coat in the cilantro-lime butter. Taste and adjust seasoning or lime juice as needed.
  5. Serve immediately—over rice, in tacos, on salad, or with crusty bread.

Notes

  • For a grill version, skewer marinated shrimp and grill 2–3 minutes per side before tossing in butter.
  • Use olive oil in place of butter for a dairy-free option.
  • Swap cilantro for parsley or basil if preferred.
  • Leftovers keep 2 days refrigerated; reheat gently to avoid overcooking.
  • Freeze cooked shrimp in butter sauce up to 2 months; thaw slowly and reheat over low heat.
