Description
Lemon Cheese Scones are a perfect balance of zesty citrus and creamy cheese, nestled inside a light, buttery scone. A refreshing twist on a classic favorite, ideal for breakfast, brunch, or an afternoon snack with tea or coffee.
Ingredients
For the Scone:
20 g lemon zest (about 2 lemons)
320 g cake flour
7 g baking powder
50 g milk
75 g granulated sugar
60 g unsalted butter
For the Lemon Cheese:
240 g cream cheese
30 g granulated sugar
10 g lemon zest (about 1 lemon)
10 g lemon juice (half of a lemon)
Instructions
- Prepare the Dough:
- Mix the dry ingredients: In a clean bowl, combine the lemon zest, sugar, baking powder, cake flour, and butter. Mix until the ingredients resemble a crumbly texture.
- Form the dough: Add the milk and mix until the dough begins to come together. Divide the dough into two parts, stack them, and flatten. Repeat the stacking and flattening process 5-6 times to create layers for a flakier texture.
- Chill the dough: Wrap the dough in plastic wrap and chill in the fridge for 1 hour to firm up.
- Prepare the Lemon Cheese Filling:
- Mix the cream cheese: In a clean bowl, beat together the lemon zest, lemon juice, and cream cheese until smooth and even. Chill in the fridge for 1 hour to firm up.
- Assemble the Scones:
- Preheat the oven to 170°C (338°F).
- Shape the scones: After the dough has chilled, divide it into 10 equal pieces and flatten each piece into a disc.
- Stuff the scones: Divide the chilled cream cheese mixture into 10 equal portions and roll each portion into a ball. Wrap each flattened dough piece around about 3/4 of the cream cheese ball, sealing it tightly around the filling.
- Bake: Place the scones on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes or until golden brown.
- Cool and serve: Let the scones cool slightly on a rack before serving.
Notes
- Add blueberries for a fruity twist.
- Drizzle a simple lemon glaze over the scones once cooled for extra sweetness.
- Replace cake flour with gluten-free flour for a gluten-free version.
- For an herby flavor, add fresh thyme or rosemary to the dough.
