Ingredients

10 g lemon zest (about 1 lemon)

10 g lemon juice (half of a lemon)


Instructions

  1. Prepare the Dough:
    1. Mix the dry ingredients: In a clean bowl, combine the lemon zest, sugar, baking powder, cake flour, and butter. Mix until the ingredients resemble a crumbly texture.
    2. Form the dough: Add the milk and mix until the dough begins to come together. Divide the dough into two parts, stack them, and flatten. Repeat the stacking and flattening process 5-6 times to create layers for a flakier texture.
    3. Chill the dough: Wrap the dough in plastic wrap and chill in the fridge for 1 hour to firm up.
  2. Prepare the Lemon Cheese Filling:
    1. Mix the cream cheese: In a clean bowl, beat together the lemon zest, lemon juice, and cream cheese until smooth and even. Chill in the fridge for 1 hour to firm up.
  3. Assemble the Scones:
    1. Preheat the oven to 170°C (338°F).
    2. Shape the scones: After the dough has chilled, divide it into 10 equal pieces and flatten each piece into a disc.
    3. Stuff the scones: Divide the chilled cream cheese mixture into 10 equal portions and roll each portion into a ball. Wrap each flattened dough piece around about 3/4 of the cream cheese ball, sealing it tightly around the filling.
    4. Bake: Place the scones on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes or until golden brown.
