Description

Korean Beef and Rice is a flavorful, quick, and easy dish that combines savory ground beef with a sweet and salty sauce, all served over a bed of hot brown rice. With a hint of sesame oil and a touch of spice from red pepper flakes, this dish is the perfect balance of rich and savory flavors.

Ingredients

1 pound lean ground beef (90% lean)

3 garlic cloves, minced

1/4 cup packed brown sugar

1/4 cup reduced-sodium soy sauce

2 teaspoons sesame oil

1/4 teaspoon ground ginger

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon pepper

22/3 cups hot cooked brown rice

3 green onions, thinly sliced

Instructions

  1. In a large skillet, cook the ground beef and minced garlic over medium heat for 6-8 minutes, or until the beef is no longer pink, breaking it up into crumbles as it cooks.
  2. While the beef is cooking, in a small bowl, combine the brown sugar, soy sauce, sesame oil, ground ginger, crushed red pepper flakes, and pepper.
  3. Once the beef is cooked through, stir in the sauce mixture and cook for 1-2 more minutes, until heated through and the sauce has thickened slightly.
  4. Serve the beef mixture over the hot cooked brown rice.
  5. Sprinkle with sliced green onions and serve immediately.

Notes

  • Vegetarian Version: Substitute the ground beef with ground tofu, tempeh, or a plant-based ground meat substitute for a vegetarian option.
  • Add Veggies: Stir in some diced bell peppers, carrots, or broccoli to the beef mixture for added vegetables and nutrition.
  • Spicy Kick: If you like things extra spicy, add more crushed red pepper flakes or a dash of sriracha sauce to the beef mixture.
  • Rice Substitutes: Try serving the beef mixture with white rice, quinoa, or cauliflower rice for a different base.
