Keto Cloud Bread (Oopsie Rolls) are light, fluffy, low-carb rolls made with eggs and cream cheese—perfect for sandwiches, burgers, or a quick snack while staying keto-friendly.
Ingredients
3 large eggs
3 ounces cream cheese, softened
1 dash salt
1 pinch cream of tartar (optional but recommended)
Instructions
- Preheat oven: Set to 300°F (150°C). Line a baking pan with parchment paper or a silicone baking mat.
 - Separate eggs: Place yolks in one bowl and whites in another.
 - Mix yolks: Blend yolks with softened cream cheese and a dash of salt using an electric mixer until smooth.
 - Whip whites: Sprinkle cream of tartar over egg whites (if using). Beat with clean beaters until very stiff peaks form.
 - Fold: Gently fold yolk mixture into whipped whites using a spatula. Avoid overmixing.
 - Shape: Spoon 6 equal mounds onto the prepared baking sheet. Flatten slightly with the back of the spoon.
 - Bake: Bake for 25–30 minutes until golden, but not overly crisp.
 - Cool: Let rest on the pan for 3–5 minutes, then transfer to a cooling rack.
 
Notes
- For a thicker bun, mix in ¼ cup almond flour into the yolk mixture.
 - Add garlic powder, herbs, or shredded cheese for extra flavor.
 - For dessert-style cloud bread, add vanilla and keto-friendly sweetener.
