Ingredients

- 3 tbsp avocado oil

- 1/3 cup granular sweetener (erythritol or allulose)
- 1 tsp cinnamon
- 1/4 cup butter (melted)
Instructions
- Preheat waffle iron: Preheat a mini or classic style waffle iron, avoiding deep Belgian style irons to ensure the right waffle texture.
- Beat egg whites: In a large bowl, beat the egg whites with salt and cream of tartar until stiff peaks form.
- Mix dry and wet ingredients: In a separate large bowl, whisk almond flour, erythritol, and baking powder. Stir in almond milk, egg yolk, avocado oil, and vanilla until well combined.
- Fold egg whites: Gently fold the beaten egg whites into the almond flour mixture, ensuring there are no streaks for a light batter.
- Cook waffles: Lightly grease the waffle iron, add 3–4 tablespoons of batter per waffle section, and cook undisturbed for 4–5 minutes until golden brown.
- Cool waffles: Transfer cooked waffles to a wire rack placed over a rimmed baking sheet. Re-grease waffle iron and repeat with remaining batter.
