Ingredients

4 slices bread

1 cup baked beans (store-bought or homemade)

1 tablespoon oil

1 tablespoon butter

4 chicken sausage links

2 medium tomatoes, halved or sliced

8 mushrooms, halved or sliced

4 large eggs

Salt and black pepper, to taste

2 spring onions, chopped (for garnish)


Instructions

  1. Warm baked beans in a small saucepan or microwave. Keep warm.
  2. Lightly butter the bread slices and toast them in a frying pan until golden. Set aside.
