Ingredients
4 slices bread
1 cup baked beans (store-bought or homemade)
1 tablespoon oil
1 tablespoon butter
4 chicken sausage links
2 medium tomatoes, halved or sliced
8 mushrooms, halved or sliced
4 large eggs
Salt and black pepper, to taste
2 spring onions, chopped (for garnish)
Instructions
- Warm baked beans in a small saucepan or microwave. Keep warm.
- Lightly butter the bread slices and toast them in a frying pan until golden. Set aside.
- In the same pan, heat oil over medium heat. Add sausages, tomatoes, and mushrooms. Cook until sausages are browned, tomatoes softened, and mushrooms tender.
- Move cooked items aside. Add butter and crack in the eggs. Season with salt and pepper. Cook to desired doneness.
- Plate each serving with two sausages, one egg, toast, mushrooms, tomatoes, and a scoop of baked beans. Garnish with chopped spring onions.
- Serve immediately while hot.
