Description

A simple and classic vinaigrette made from white wine vinegar, Dijon mustard, and olive oil—with balanced seasoning—that’s perfect for salads, marinades, or general dipping.

Ingredients

¼ cup white wine vinegar

2 teaspoons Dijon mustard

¼ teaspoon kosher salt

¼ teaspoon freshly ground black pepper

¼ teaspoon granulated sugar

½ cup extra‑virgin olive oil

Optional: 1–2 cloves garlic, minced

Optional: 1–2 tablespoons minced fresh herbs (e.g. parsley, dill, chives, basil)

Instructions

  1. In a small bowl, whisk together vinegar, Dijon mustard, salt, pepper, and sugar until well combined.
  2. Slowly drizzle in the olive oil while whisking constantly to emulsify the dressing.
  3. Taste and adjust seasoning—add more salt, pepper, or sugar as needed.
  4. Optional: Combine all ingredients in a Mason jar, secure the lid, and shake vigorously until fully emulsified.

Notes

  • Whisk slowly when adding oil to ensure a smooth emulsion.
  • Shake or whisk again if dressing separates during storage.
  • For bright flavor, make fresh when adding garlic or herbs—use within 5 days.
  • Adjust acidity by reducing vinegar or adding lemon juice for variation.
