Description

These homemade hamburger buns are soft, fluffy, and perfect for any burger or sandwich. Made from scratch with simple ingredients, they offer a slightly sweet flavor and a beautiful golden crust topped with sesame seeds or Everything But The Bagel seasoning. The buns are easy to prepare with a stand mixer, allowed to rise twice for optimal texture, and baked to golden perfection at 375°F. Ideal for elevating your burger nights with fresh, bakery-quality buns at home.

Ingredients

Dough Ingredients

  • 3 1/4 cups all purpose flour, spooned and leveled
  • 3/4 cups water, heated to 105°F
  • 1/4 cup granulated sugar
  • 2 Tbsp. unsalted butter, room temperature
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. instant yeast (rapid rise)
  • 1 large egg, room temperature
  • 1 1/2 tsp. table salt

Topping Ingredients

  • 3 Tbsp. melted unsalted butter
  • 1 egg mixed with 1 Tbsp. water (egg wash)
  • Sesame seeds or Everything But The Bagel Seasoning

Instructions

  1. Combine dough ingredients: In the bowl of a stand mixer, add all the dough ingredients together including flour, water, sugar, butter, oil, yeast, egg, and salt.
  2. Knead: Attach the dough hook and knead the dough for 6-8 minutes until it becomes soft, smooth, and slightly tacky but not overly sticky.
  3. Rise: Transfer the dough to a lightly greased or oiled bowl, cover with plastic wrap, and let it rise for 1 ½ to 2 hours until it doubles in volume.
  4. Divide the dough: Gently punch down the dough and turn it out onto a clean surface. Divide into 8 equal sections, about 100 grams each, using a bench scraper.
  5. Shape the dough: Pinch the dough at the bottom and roll under the palm to form smooth balls; seam side down.
  6. Place on baking sheet: Position each dough ball on a parchment-lined baking sheet, spacing them a few inches apart to prevent sticking.
  7. Second rise: Flatten each ball to about 3 inches in diameter with your palm. Loosely cover with plastic wrap and allow to rise for another hour.
  8. Preheat and prep: Preheat oven to 375°F. Brush buns with melted butter, then brush with the egg wash to help seeds stick. Sprinkle sesame seeds or your choice of seasoning on top.
  9. Bake: Bake buns for 15-18 minutes until golden brown and beautifully cooked through.
  10. Cool, slice, and enjoy: Brush any remaining melted butter on the buns after baking without disturbing the seeds. Cool on a wire rack and slice horizontally with a serrated knife when ready to serve.

Notes

  • For best results, ensure water is warmed to about 105°F to activate the yeast properly.
  • Use instant yeast for quicker rising and easier mixing directly into dry ingredients.
  • If dough feels too sticky during kneading, lightly flour your hands or work surface but avoid adding too much flour.
  • The double rise is essential for fluffy, tender buns with good volume.
  • You can substitute the sesame seeds with other toppings like poppy seeds or coarse salt based on preference.
  • Store leftover buns in an airtight container or freeze them for longer shelf life.
  • Reheat buns wrapped in foil in the oven for a few minutes to refresh softness.
