Ingredients
12 large eggs
16 oz full-fat cottage cheese
1 large red bell pepper, diced
½ cup diced yellow onion
4 cups chopped spinach
¼ cup shredded Gruyère or Gouda cheese
½ cup shredded cheddar cheese
½ tsp garlic powder
½ tsp Italian seasoning
½ tsp kosher salt
¼ tsp ground black pepper
Instructions
- Preheat oven to 375 °F (190 °C). Spray a 9×13‑inch pan with cooking spray.
- Layer diced red pepper, onion, and spinach evenly in the bottom.
- In a bowl, whisk eggs, then mix in cottage cheese, garlic powder, Italian seasoning, salt, pepper, and Gruyère/Gouda cheese.
- Pour the egg mixture over the veggies in the pan.
- Sprinkle shredded cheddar cheese on top.
- Bake for 50–55 minutes, until center is set and top is golden.
