Description
Crispy hash brown nests filled with baked eggs and melted cheese, perfect for a breakfast or brunch dish that combines comfort and convenience in one bite-sized serving.
Ingredients
Hash Brown Nests
- 2 medium russet potatoes (about 2 cups shredded)
- 1/2 cup shredded cheese
- Salt and pepper to taste
- Cooking spray
- 4-6 eggs
- Parsley for serving
Instructions
- Preheat and prepare pan: Preheat the oven to 350°F. Generously grease a 6-cup muffin pan with cooking spray to prevent sticking and ensure easy removal of the hash brown nests.
- Grate and rinse potatoes: Peel the potatoes and grate them using a large box grater. Transfer the grated potatoes to a colander and rinse under cold water until the water runs clear to remove excess starch. Dry the potatoes thoroughly using paper towels to ensure crispiness.
- Form nests: Divide the dried hash browns evenly into the muffin cups. Press firmly with fingers or the bottom of a small measuring cup to shape the potatoes into nests. Season each with salt and pepper and spray again lightly with cooking spray.
- Bake nests: Bake the nests in the preheated oven for 15 to 20 minutes, until they are golden brown and edges start to crisp up. Remove from the oven once ready.
- Prepare eggs: In a bowl, whisk together 4 eggs and season with salt and pepper. You may add any additional toppings or seasonings at this stage if desired.
- Fill nests with eggs and cheese: Carefully pour the whisked eggs evenly into each hash brown nest. Sprinkle the shredded cheese on top of the eggs in each cup.
- Bake again: Return the muffin pan to the oven and bake for another 12 to 15 minutes, until the egg whites are fully set and the cheese has melted.
- Cool and serve: Allow the egg nests to cool for 5 minutes before removing them from the pan. Garnish with parsley and serve warm.
Notes
- To ensure the nests remain crispy, make sure to dry the grated potatoes thoroughly before forming the nests.
- You can add toppings like cooked bacon, diced bell peppers, or onions to the egg mixture for extra flavor.
- Use a sharp knife to loosen edges before removing nests from the muffin pan.
- For a lower fat option, use reduced-fat cheese and spray cooking oil sparingly.
- These nests can be prepared ahead and reheated in the oven or microwave.
