  • 2 medium russet potatoes (about 2 cups shredded)
  • 1/2 cup shredded cheese
  • Salt and pepper to taste
  • Cooking spray
  • 4-6 eggs
  • Parsley for serving


Instructions

  1. Preheat and prepare pan: Preheat the oven to 350°F. Generously grease a 6-cup muffin pan with cooking spray to prevent sticking and ensure easy removal of the hash brown nests.
  2. Grate and rinse potatoes: Peel the potatoes and grate them using a large box grater. Transfer the grated potatoes to a colander and rinse under cold water until the water runs clear to remove excess starch. Dry the potatoes thoroughly using paper towels to ensure crispiness.
  3. Form nests: Divide the dried hash browns evenly into the muffin cups. Press firmly with fingers or the bottom of a small measuring cup to shape the potatoes into nests. Season each with salt and pepper and spray again lightly with cooking spray.
  4. Bake nests: Bake the nests in the preheated oven for 15 to 20 minutes, until they are golden brown and edges start to crisp up. Remove from the oven once ready.
  5. Prepare eggs: In a bowl, whisk together 4 eggs and season with salt and pepper. You may add any additional toppings or seasonings at this stage if desired.
  6. Fill nests with eggs and cheese: Carefully pour the whisked eggs evenly into each hash brown nest. Sprinkle the shredded cheese on top of the eggs in each cup.
