1 lb lean ground beef
1 medium yellow onion, diced
1 red bell pepper, diced
1.5 lbs Yukon Gold potatoes, peeled and cubed
1 cup beef stock or water
2 tablespoons Worcestershire sauce
1 teaspoon Dijon mustard
2–3 green onions, chopped
For the spices:
1 tablespoon cumin (divided)
2 teaspoons paprika (divided)
2 teaspoons dried thyme (divided)
1 teaspoon garlic powder (divided)
1 teaspoon salt (divided)
½ teaspoon black pepper (divided)
Instructions

Heat olive oil in a large skillet over medium heat. Brown the ground beef, seasoning with half of the spices. Remove and set aside.

Add cubed potatoes to the same skillet, seasoning with the remaining spices. Pour in beef stock and cover. Cook for 8-10 minutes until tender.
