Ingredients

For the dish:

2 tablespoons olive oil

1 lb lean ground beef

1 medium yellow onion, diced

1 red bell pepper, diced

1.5 lbs Yukon Gold potatoes, peeled and cubed

1 cup beef stock or water

2 tablespoons Worcestershire sauce

1 teaspoon Dijon mustard

23 green onions, chopped

For the spices:

1 tablespoon cumin (divided)

2 teaspoons paprika (divided)

2 teaspoons dried thyme (divided)

1 teaspoon garlic powder (divided)

1 teaspoon salt (divided)

½ teaspoon black pepper (divided)


Instructions

  • Heat olive oil in a large skillet over medium heat. Brown the ground beef, seasoning with half of the spices. Remove and set aside.

  • Add cubed potatoes to the same skillet, seasoning with the remaining spices. Pour in beef stock and cover. Cook for 8-10 minutes until tender.

  • Sauté diced onion and red bell pepper until softened, about 4-5 minutes.

  • Add the cooked ground beef back into the skillet, stir in Worcestershire sauce and Dijon mustard, and adjust seasoning.

  • Garnish with chopped green onions and serve warm.
