Description

A vibrant and flavorful dish featuring succulent shrimp and sweet pineapple grilled to perfection with spicy jerk seasoning and a tangy brown sugar glaze—ideal for summer cookouts or festive gatherings.


Ingredients

2 lb large or jumbo shrimp, shell-on and deveined (tails intact)

1 pineapple, peeled and cut into 1″ cubes

½ tsp onion powder

½ tsp garlic powder

½ tsp salt

¼ tsp black pepper

½ tsp dried thyme

½ tsp chili powder

½ tsp ground ginger

¼ tsp ground cinnamon

¼ tsp ground nutmeg

1 Tbsp brown sugar

Juice of 1 large lime

 cup oil (vegetable or light olive)

12 Tbsp chopped fresh cilantro


Instructions

  1. Soak wooden skewers in water for 30 minutes. Preheat grill to high heat.
  2. Whisk together all jerk seasoning ingredients in a large bowl. In another bowl, mix brown sugar, lime juice, oil, and cilantro to make the glaze.
  3. Toss shrimp and pineapple cubes with jerk seasoning until evenly coated.
  4. Thread shrimp and pineapple alternately onto skewers (about 3 shrimp per skewer).
  5. Lightly oil grill grates. Grill skewers for 2–3 minutes per side, brushing with glaze after each flip. Cook until shrimp are opaque and pineapple is charred.
  6. Brush with remaining glaze and serve hot.

Notes

  • Add ¼ tsp cayenne to the seasoning for more heat.
  • Use chicken or tofu for alternate proteins.
  • Honey or maple syrup can replace brown sugar in the glaze.
  • Grill pineapple separately for a caramelized touch.
  • Serve with coconut rice, grilled veggies, or salad.
