Ingredients
6 bone-in, skin-on chicken thighs (or boneless if preferred)
2 tablespoons olive oil

1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon chili flakes (optional)
½ cup Greek yogurt (or sour cream)
1 tablespoon mayonnaise
1 tablespoon olive oil
1 garlic clove
Juice of ½ lemon
½ cup fresh parsley
¼ cup fresh dill or basil
Salt and pepper, to taste
1 teaspoon honey (optional)
2 green onions, finely chopped (for garnish)
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large bowl or zip-top bag, combine chicken thighs with olive oil, garlic powder, paprika, salt, pepper, and chili flakes if using. Marinate for at least 30 minutes or overnight.
- In a food processor or blender, combine Greek yogurt, mayonnaise, olive oil, garlic, lemon juice, parsley, dill or basil, salt, and pepper. Blend until smooth. Taste, adjust seasoning, and refrigerate until serving.
- Preheat grill to medium-high heat (400°F). Place chicken skin-side down and grill for 6–7 minutes. Flip and grill another 6–7 minutes, until internal temperature reaches 165°F.
- Remove chicken and let rest for 5 minutes.
