It’s the perfect addition to any salad, especially a classic Greek salad. Ingredients
For the Dressing:
⅔ cup extra virgin olive oil
¼ cup red wine vinegar
½ tablespoon Dijon mustard
1 minced garlic clove
2 teaspoons lemon juice
1 teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
¼ teaspoon ground black pepper
Instructions
- Combine ingredients: Add all of the ingredients (olive oil, red wine vinegar, Dijon mustard, garlic, lemon juice, oregano, basil, salt, and black pepper) to a bowl or mason jar.
- Whisk or shake: Whisk the ingredients together in the bowl until fully emulsified, or if using a mason jar, screw on the lid and shake until well combined.
- Taste and adjust: Taste the dressing and adjust the seasonings to your preference. You can add more salt, pepper, or lemon juice if desired.
- Store: Transfer the dressing to an airtight container and store it in the fridge for up to 1 week. Shake or whisk before using.
Notes
- Add Honey: If you prefer a slightly sweeter dressing, add a teaspoon of honey or maple syrup to balance out the tangy vinegar and mustard.
- Herb Variation: You can use fresh herbs instead of dried if available. For fresh oregano, use about 1 tablespoon finely chopped.
- Spicy Kick: Add a pinch of red pepper flakes or a small diced jalapeño to give the dressing a spicy twist.
- Garlic-Free Version: If you’re not a fan of garlic, simply omit it for a milder flavor.
