Instructions
- For Potatoes:
Prepare the potatoes: Wash and scrub the baby red potatoes. Slice off any bruised spots or sprouts, then cut the potatoes in half. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. - Season the potatoes: Place the halved potatoes in a large bowl, and add 2 tablespoons of olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper. Toss the potatoes until they are evenly coated with the oil and seasonings.
- Roast the potatoes: Spread the potatoes in a single layer on half of the prepared baking sheet. Place them in the oven and bake for 15 minutes.
- For Green Beans:
Prepare the green beans: While the potatoes are baking, place the trimmed green beans in the same bowl used for the potatoes. Add 1 tablespoon olive oil, 4 minced garlic cloves, and ½ teaspoon Italian seasoning. Toss the green beans to coat them evenly with the oil and seasonings. - Add the green beans: After the potatoes have baked for 15 minutes, remove the baking sheet from the oven. Spread the seasoned green beans over the other half of the baking sheet.
- Finish roasting: Return the baking sheet to the oven and bake for an additional 23-28 minutes, or until the potatoes are tender when pierced with a fork and the edges of the veggies are slightly crispy.
- Serve: Remove from the oven and transfer the potatoes and green beans to a bowl to serve.
