Ingredients

10 oz fresh spinach

23 cups sliced mushrooms (Bella or any variety)

2 tablespoons minced garlic

1 jalapeño pepper, minced

2 tablespoons balsamic vinegar (or fresh lemon juice)

2 tablespoons butter (or olive oil for dairy-free option)

Salt and pepper, to taste


Instructions

  1. In a large skillet, melt the butter over medium heat. Add the mushrooms and sauté for 3–5 minutes until softened.
  2. Stir in the minced garlic and jalapeño, cooking for 1 minute, being careful not to burn the garlic.
  3. Season with salt and pepper to taste.
  4. Add the balsamic vinegar (or lemon juice) and stir to combine.
  5. Add the fresh spinach and sauté just until wilted, then remove from heat immediately.
