Ingredients

Granola Base

  • 1/4 cup almond butter
  • 34 tbsp honey (depending on desired sweetness)
  • 1 tsp vanilla extract

Filling and Topping

  • 1 1/2 cups Greek yogurt (plain or flavored)
  • Berries of choice to top


Instructions

  1. Prepare the granola dough: In a bowl, mix together oats, cinnamon, almond butter, honey, and vanilla extract until a sticky dough forms. If the mixture feels too dry, add a bit more almond butter and honey to reach the right consistency.
  2. Form the base: Line a muffin pan with muffin liners. Spoon a portion of the granola dough into the bottom of each muffin cup and firmly press down with your fingers to create a sturdy, compact base layer.
  3. Fill the cups: Add a spoonful of Greek yogurt on top of each granola base, smoothing it out gently.
  4. Add toppings: Top each yogurt-filled cup with fresh berries and sprinkle any leftover granola over the top for extra crunch.
  5. Freeze to set: Place the muffin pan in the freezer and let the cups set for at least 4 hours to firm up properly.
