Ingredients
Granola Base
- 3/4 cup oats
- 1/2 tsp cinnamon
- 1/4 cup almond butter
- 3–4 tbsp honey (depending on desired sweetness)
- 1 tsp vanilla extract
Filling and Topping
- 1 1/2 cups Greek yogurt (plain or flavored)
- Berries of choice to top
Instructions
- Prepare the granola dough: In a bowl, mix together oats, cinnamon, almond butter, honey, and vanilla extract until a sticky dough forms. If the mixture feels too dry, add a bit more almond butter and honey to reach the right consistency.
- Form the base: Line a muffin pan with muffin liners. Spoon a portion of the granola dough into the bottom of each muffin cup and firmly press down with your fingers to create a sturdy, compact base layer.
- Fill the cups: Add a spoonful of Greek yogurt on top of each granola base, smoothing it out gently.
- Add toppings: Top each yogurt-filled cup with fresh berries and sprinkle any leftover granola over the top for extra crunch.
- Freeze to set: Place the muffin pan in the freezer and let the cups set for at least 4 hours to firm up properly.
- Serve: Remove from the freezer and allow the cups to thaw slightly before enjoying for best texture and flavor.
Notes
- Use either plain or flavored Greek yogurt for the filling. If using plain yogurt, sweeten with 1/2 tsp vanilla extract and honey or maple syrup to taste.
