Description

Frico Pickle Rollups are a crunchy, cheesy, tangy snack made with dill pickles, sharp cheddar cheese, and a crispy Cheetos coating. This quick and easy low-carb appetizer is perfect for parties, game-day spreads, or a fun snack idea, combining bold flavors and textures in just 15 minutes.


Ingredients

Cooking spray

4 tablespoons finely crushed crunchy Cheetos, divided

4 slices sharp Cheddar cheese, divided

4 dill pickle spears


Instructions

  1. Heat a medium nonstick skillet over medium heat. Remove from heat and spray with cooking spray.
  2. Return skillet to medium heat and sprinkle 1 tablespoon of crushed Cheetos in an area roughly the size of a cheese slice.
  3. Place a slice of sharp Cheddar cheese directly on top of the crushed Cheetos. Cook until melted and lightly browned at the edges, 2–3 minutes.
  4. Place one pickle spear in the center of the melted cheese. Gently fold the edges of the cheese around the pickle to form a rollup.
  5. Remove from skillet and place on a wire rack or paper towel-lined plate to cool slightly.
  6. Repeat with remaining ingredients, wiping out skillet and re-spraying with cooking spray as needed.
  7. Serve warm or at room temperature.
