Description
Frico Pickle Rollups are a crunchy, cheesy, tangy snack made with dill pickles, sharp cheddar cheese, and a crispy Cheetos coating. This quick and easy low-carb appetizer is perfect for parties, game-day spreads, or a fun snack idea, combining bold flavors and textures in just 15 minutes.
Ingredients
Cooking spray
4 tablespoons finely crushed crunchy Cheetos, divided
4 slices sharp Cheddar cheese, divided
4 dill pickle spears
Instructions
- Heat a medium nonstick skillet over medium heat. Remove from heat and spray with cooking spray.
 - Return skillet to medium heat and sprinkle 1 tablespoon of crushed Cheetos in an area roughly the size of a cheese slice.
 - Place a slice of sharp Cheddar cheese directly on top of the crushed Cheetos. Cook until melted and lightly browned at the edges, 2–3 minutes.
 - Place one pickle spear in the center of the melted cheese. Gently fold the edges of the cheese around the pickle to form a rollup.
 - Remove from skillet and place on a wire rack or paper towel-lined plate to cool slightly.
 - Repeat with remaining ingredients, wiping out skillet and re-spraying with cooking spray as needed.
 - Serve warm or at room temperature.
