Description
Crispy baguette slices topped with creamy ricotta, fresh peaches, chopped mint, and a drizzle of honey. This easy, elegant bruschetta is the perfect summer appetizer or brunch snack.
Ingredients
1 baguette, sliced into 8–10 pieces
1 cup ricotta cheese
2 ripe peaches, diced
2 tablespoons fresh mint leaves, finely chopped
2 tablespoons honey
1 tablespoon olive oil
Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and place on a baking sheet. Bake 8–10 minutes until golden and crisp. Let cool slightly.
- Dice peaches and toss with chopped mint, salt, and pepper to taste.
- Spread ricotta on each toasted baguette slice. Top with peach–mint mixture and drizzle with honey.
- Arrange on a platter and garnish with extra mint if desired. Serve immediately.
Notes
- Use goat cheese or mascarpone for a twist on the ricotta base.
- Swap peaches with nectarines, figs, or strawberries depending on the season.
- Lemon zest or balsamic glaze adds extra depth.
