Description

Crispy baguette slices topped with creamy ricotta, fresh peaches, chopped mint, and a drizzle of honey. This easy, elegant bruschetta is the perfect summer appetizer or brunch snack.


Ingredients

1 baguette, sliced into 810 pieces

1 cup ricotta cheese

2 ripe peaches, diced

2 tablespoons fresh mint leaves, finely chopped

2 tablespoons honey

1 tablespoon olive oil

Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and place on a baking sheet. Bake 8–10 minutes until golden and crisp. Let cool slightly.
  2. Dice peaches and toss with chopped mint, salt, and pepper to taste.
  3. Spread ricotta on each toasted baguette slice. Top with peach–mint mixture and drizzle with honey.
  4. Arrange on a platter and garnish with extra mint if desired. Serve immediately.

Notes

  • Use goat cheese or mascarpone for a twist on the ricotta base.
  • Swap peaches with nectarines, figs, or strawberries depending on the season.
  • Lemon zest or balsamic glaze adds extra depth.
