Ingredients
3–4 boneless, skinless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1-inch fresh ginger, minced or grated
1 cup coconut milk
4 cups low-sodium chicken broth
Juice of 1 lime
Bell peppers, sliced (to taste)
Carrots, sliced (to taste)
Low-sodium soy sauce, to taste
1 tbsp oil for sautéing (optional)
Instructions
- Prep ingredients: Chop chicken into bite-sized pieces. Mince garlic and ginger. Slice bell peppers and carrots.
- Heat oil in a large pot over medium heat. Add garlic and ginger; sauté 1 minute until fragrant. Add chicken and cook ~5 minutes until no longer pink.
- Pour in chicken broth and coconut milk. Add bell peppers and carrots. Simmer ~10 minutes until vegetables are tender and chicken is cooked through.
- Remove from heat, stir in lime juice and soy sauce to taste. Garnish with cilantro or green onions if desired. Serve hot.
