Description

These Easy Sheet Pan Chicken Fajitas are a quick, flavorful, and customizable meal that’s ready in just 30 minutes. Tender chicken, colorful bell peppers, and onions are seasoned with a homemade fajita spice blend, then roasted on a single sheet pan. Perfect for a busy weeknight dinner or meal prepping, this one-pan dish is packed with savory, smoky, and zesty flavors!


Ingredients

For the Fajitas:

2 lbs chicken breasts, sliced into ¼-inch strips

3 bell peppers (red, yellow, and green), sliced

2 large onions, sliced

3 tablespoons olive oil

2 limes, juiced

1618 small flour or corn tortillas

For the Fajita Seasoning:

2 teaspoons chili powder

1 teaspoon ground cumin1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon oregano

1 teaspoon salt

½ teaspoon black pepper

Optional Toppings:

Fresh cilantro

Sour cream

Guacamole

Pico de gallo

Shredded cheese

Lime wedges


Instructions

  • Prep (15 minutes): Preheat the oven to 425°F (218°C). Line a large sheet pan with parchment paper or foil. Slice chicken, bell peppers, and onions. Mix fajita seasoning ingredients in a small bowl.

  • Season and Arrange (5 minutes): Drizzle chicken, bell peppers, and onions with olive oil and lime juice. Sprinkle with seasoning and toss to coat evenly. Arrange in a single layer on the sheet pan.

  • Cook (20-25 minutes): Roast at 425°F for 20-25 minutes, stirring halfway through, until chicken reaches 165°F. Optional: Broil for 2-3 minutes for extra char.

 

  • Serve: Warm tortillas and assemble fajitas with the chicken and veggie mix, topping with cilantro, sour cream, guacamole, and shredded cheese.

Notes

Add jalapeños or chili flakes for a spicy version.

Use corn or flour tortillas based on preference, or go low-carb with lettuce wraps.

For extra veggies, try adding zucchini, mushrooms, or squash.
