Description

Easy Chili Dip is a crowd-pleasing appetizer with layers of creamy cream cheese, savory chili, melted cheese, and crispy toppings. Ingredients

For the Salad:1 (8-ounce) package cream cheese, softened

1 teaspoon onion powder

¼ cup sour cream, divided

2 tablespoons canola oil

1 pound 80/20 ground beef

1 teaspoon kosher salt, plus more to taste

1 (15-ounce) can chili with beans or 2 cups homemade chili with beans

4 ounces pre-shredded Mexican-style 4-cheese blend (about 1 cup)

1 green onion, sliced

1 plum tomato, chopped (about ½ cup)

¼ cup crispy fried onions (such as French’s)

Corn chip scoops (such as Fritos Scoops), for serving


Instructions

  • Preheat the Oven:
    Preheat the oven to 350°F (175°C).

  • Make the Cream Cheese Base:
    In a medium bowl, stir together the cream cheese, onion powder, and 2 tablespoons of sour cream until thoroughly blended. Spread the cream cheese mixture evenly into the bottom and sides of a 9-inch deep pie plate or 10-inch oven-safe skillet. Set aside.

  • Cook the Chili Layer:

    • Heat canola oil in a large skillet over medium-high heat.

    • Add ground beef and kosher salt, cooking and breaking up the meat until browned and crispy, about 8 to 10 minutes.

    • Transfer beef to a paper towel-lined plate to drain.

    • Add the chili to the skillet, bring to a simmer, then stir in the beef. Adjust seasoning with salt as needed.

  • Assemble and Bake the Chili Dip:

    • Spoon the chili mixture over the cream cheese base and spread evenly.

    • Sprinkle shredded cheese on top and bake for 20 minutes, until the cheese melts and the dip is warmed through.

 

  • Top and Serve:

    • Remove the dip from the oven and top with green onions, tomatoes, and crispy fried onions.

    • Serve immediately with Fritos Scoops and the remaining sour cream.

Notes

Spicy Kick: Add hot sauce or chopped jalapeños to the chili layer for extra heat.

Cheese Options: Experiment with different cheeses like cheddar, Monterey Jack, or pepper jack for variety.
